I used spinach &amp;amp; broccoli, but I think you could throw in any veggie you like (bell pepper, mushroom, onion) &amp;amp; it would still be delicious.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/div&gt;&lt;div&gt;Pre-made refrigerated pie crust (I bought store brand this past time, &amp;amp; I think this is something you should get the name brand version of - see notes for explanation)&lt;/div&gt;&lt;div&gt;4 eggs&lt;/div&gt;&lt;div&gt;1 cup milk&lt;/div&gt;&lt;div&gt;Chopped spinach (I used 10 oz frozen)&lt;/div&gt;&lt;div&gt;Chopped broccoli (10 oz frozen)&lt;/div&gt;&lt;div&gt;1.5 cups shredded Italian cheese blend (you can use another kind if you want)&lt;/div&gt;&lt;div&gt;3 cloves of garlic, minced&lt;/div&gt;&lt;div&gt;1 tbsp olive oil&lt;/div&gt;&lt;div&gt;Spices to taste (I used salt, pepper, onion powder)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;/div&gt;&lt;div&gt;-Preheat oven to 375 degrees&lt;/div&gt;&lt;div&gt;-Let pie crust come to room temperature, then unroll &amp;amp; place in pie pan. Using a fork, poke holes in the bottom of the crust. Put in heated oven for about 5 minutes to set (so it doesn't get soggy).&lt;/div&gt;&lt;div&gt;-Warm olive oil in a large skillet over medium heat. Add veggies (if frozen, thaw first) &amp;amp; garlic, stir together until warm.&lt;/div&gt;&lt;div&gt;-Add spices &amp;amp; 1 cup of the cheese, stir together until cheese is melted.&lt;/div&gt;&lt;div&gt;-Whisk eggs &amp;amp; add milk to eggs.&lt;/div&gt;&lt;div&gt;-Place veggie &amp;amp; cheese mixture in the set crust, then pour in egg mixture.&lt;/div&gt;&lt;div&gt;-Bake quiche in oven for 15 minutes, add remaining cheese to top, then continue baking for another 30-35 minutes until set.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Notes: I had too much veggie/cheese mixture, so I didn't use all of it. Also, my quiche overflowed the crust, I think partly because it was store brand so it sunk a bit on the sides when I set it. Didn't bother me tho, it was still yummy! They are really yummy!&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Ingredients&lt;/div&gt;&lt;div&gt;Bruschetta topping (in a glass jar, I got mine at HEB in the pasta sauce section - basically tomatoes, onions, garlic, &amp;amp; herbs) - you'll use about half of it &lt;/div&gt;&lt;div&gt;1 baguette&lt;/div&gt;&lt;div&gt;1/2 cup shredded Italian blend cheese&lt;/div&gt;&lt;div&gt;Olive oil&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Directions&lt;/div&gt;&lt;div&gt;-Cut the baguette into slices (your preferred thickness; I did about half an inch thick) - discard the ones with holes that go all the way through a slice, because the topping will fall through&lt;/div&gt;&lt;div&gt;-Put a cooling rack on a cookie sheet then lay the baguette slices on the cooling rack&lt;/div&gt;&lt;div&gt;-Brush olive oil on each slice&lt;/div&gt;&lt;div&gt;-Spoon the bruschetta topping on the bread slices&lt;/div&gt;&lt;div&gt;-Put shredded cheese on bruschetta&lt;/div&gt;&lt;div&gt;-Bake at 350 degrees for about 10 minutes. Grease 15x10x1 inch baking pan. In small bowl combine mustard, salad dressing and garlic, mix well. In medium bowl combine bread crumbs, parsley, thyme and pepper, mix well. Add margarine; toss to mix well. Place chicken in greased pan. Spread mustard mixture on both sides of chicken. Spoon bread crumb mixture evenly on top of chicken; press firmly. Bake at 425 for 15-20 minutes or until chicken is done, juices run clear. If desired, slice chicken breast diagonally before serving. (1 C) Monterrey jack cheese&lt;br /&gt;Directions:&lt;br /&gt;Place 1 chicken breast half boned side up between two pieces of plastic wrap or waxed paper. Working from center, gently pound chicken with a rolling pin or flat side of tenderizer until about 1/4 inch thick. In a shallow dish, combine flour, garlic powder, paprika, chili powder. Coat chicken with flour mixture. Heat oil in a large skillet over medium-high heat. Cook chicken in oil 3-4 minutes on each side or until lightly browned and no longer pink. Reduce heat, spoon 1 tbsp of salsa onto center of each chicken breast half. Place a tomato slice on top and sprinkle evenly with cheese. Cover, cook until cheese melts. Stir in chili powder, red pepper flakes, salt, pepper, and cayenne pepper.&lt;br /&gt;4. Stir in black beans, kidney beans, and pinto beans. Cover and keep on medium heat until it boils. Turn heat down and simmer 1 to 2 hours. Boil rice and combine cooked rice with browned beef, stewed tomatoes, tomato sauce, and garlic. Steam zucchini and add to skillet while still slightly firm. The prep is kind of labor intensive, so you may want to chop the vegetables the night before, or make the entire thing the night before since most soups are always better the next day. If you double the recipe, which is what I did for Lifegroup, use the biggest stock pot you can find, because it makes a lot! I couldn't use all the water it called for since it wouldn't fit, but it just made the soup taste yummier and richer. This serves 6.&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 cup chopped onion&lt;br /&gt;4 cloves minced garlic&lt;br /&gt;1/3 lb. ground beef&lt;br /&gt;1 cup chopped celery&lt;br /&gt;1 cup cubed carrots&lt;br /&gt;2 cups tomato puree (I used an organic brand for better flavor)&lt;br /&gt;2 14.5 oz. cans stewed tomatoes, undrained&lt;br /&gt;1 14 oz. can beef broth&lt;br /&gt;1 10.5 oz. can condensed French onion soup&lt;br /&gt;5 cups water&lt;br /&gt;1/4 cup red wine&lt;br /&gt;1 tsp. dried oregano&lt;br /&gt;1 tsp. dried basil&lt;br /&gt;salt and pepper to taste&lt;br /&gt;1 cup chopped zucchini&lt;br /&gt;2 cups spinach, rinsed and sliced&lt;br /&gt;1 cup uncooked pasta (I used HEB brand Garden Shells)&lt;br /&gt;1 15 oz. can garbanzo beans, drained&lt;br /&gt;1/4 cup chopped parsley&lt;br /&gt;&lt;br /&gt;In a large stock pot, cook onion, garlic, and beef. I'm glad I made it! It was super yummy. We ate it with our favorite veggie, oven roasted asparagus. I copied &amp;amp; pasted the recipe from the &lt;a href="http://smittenkitchen.com/2010/02/spaghetti-cacio-e-pepe/#more-5685"&gt;Smitten Kitchen entry&lt;/a&gt;.&lt;div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="font-family: Tahoma, Arial, Verdana, sans-serif; font-size: 11px; color: rgb(34, 34, 34); letter-spacing: 1px; line-height: 14px; "&gt;&lt;p&gt;&lt;b&gt;Spaghetti with Cheese and Pepper [Spaghetti Cacio e Pepe]&lt;/b&gt;&lt;br /&gt;Adapted very loosely from &lt;a href="http://www.foodnetwork.com/recipes/mario-batali/bavette-with-cheese-and-pepper-bavette-cacio-e-pepe-recipe/index.html" style="color: rgb(101, 106, 123); text-decoration: none; "&gt;Mario Batali&lt;/a&gt;&lt;/p&gt;&lt;p&gt;As I’ve mentioned, for something with such a simple ingredient list this dish manages to fall all over the map. Some versions use just oil, no butter, some use neither oil of butter; some stud the sauce with large, barely cracked peppercorns and half-melted pebbles of romano; some opt for a smoother cheese, &lt;i&gt;cacio de roma&lt;/i&gt;, which I located, auditioned and discovered I liked the saltier and more accessible Pecorino Romano better. There are a lot of ways to approach the dish and people who will find something inauthentic with each of them. I say ignore them all and just enjoy your spaghetti.&lt;/p&gt;&lt;p&gt;Serves 4 as a main, 8 as a first course&lt;/p&gt;&lt;p&gt;1/4 cup olive oil&lt;br /&gt;1 pound dried spaghetti&lt;br /&gt;2 tablespoons butter&lt;br /&gt;4 ounces Pecorino Romano cheese, finely grated&lt;br /&gt;1 1/2 teaspoon finely ground black pepper&lt;br /&gt;Salt (optional)&lt;/p&gt;&lt;p&gt;Cook spaghetti in well-salted water to your &lt;i&gt;al dente&lt;/i&gt; tastes in a large, wide-bottomed pot. (You’ll have fewer dishes to wash if you use this pot to assemble the dish as well.) Drain spaghetti, reserving 1 1/2 cups of pasta cooking water.&lt;/p&gt;&lt;p&gt;Dry out your pot, then heat the olive oil over high heat until almost smoking. Add drained spaghetti and 1 cup of reserved pasta water and &lt;i&gt;jump back&lt;/i&gt;, this will splatter mightily, also known as “I made this three times, and never once learned my lesson. Do as I say, not as I do.”&lt;/p&gt;&lt;p&gt;Add butter, 3 ounces cheese and ground pepper and toss together with tongs. Spread them on a baking sheet &amp;amp; drizzle with olive oil. Rub olive oil on to thoroughly coat. Sprinkle with sea salt (or just table salt) &amp;amp; coarse black pepper. Add tomato sauce, water, tomato paste, mushrooms, salt and oregano, mixing well.  Spread 1/4 of the meat sauce in the bottom of a 5 quart slow cooker; arrange 1/3 of the noodles over the sauce, breaking the noodles to make them fit.  Combine the cheeses together; spoon 1/2 over the noodle layer.  Repeat layers twice; top with remaining meat sauce.  Cover and heat on low until noodles are tender, about 4 hours. Spread cottage cheese on top and sprinkle with remaining 1/2 C parmesan cheese.  Cook the onion in 1 T margarine and then add the ground beef; cooking until no longer pink.  Add the spaghetti sauce and heat until bubbly.  Spoon meat and sauce mixture over the cottage cheese.  Top with mozzarella cheese.  Cover with foil and bake for 30 mins at 400 degrees.  Remove foil and continue baking 15 mins or until cheese is lightly browned. In medium bowl, use a fork to mash the cream cheese and 1 T margarine together.  Add next 5 ingredients; mix well. Butter muffin tins or line with cupcake papers. Combine sugar, flour, soda, cinnamon, ginger, salt, nutmeg and nuts in a bowl. In a separate bowl, mix egg, molasses, buttermilk and melted butter, and add to the dry ingredients. Stir until just blended. Spoon into muffin tins and bake 20-25 minutes. Test with a toothpick; muffins are done when it comes out clean. It was a dutch oven recipe but can be made in any big pot.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/div&gt;&lt;div&gt;2 lbs lean ground beef&lt;/div&gt;&lt;div&gt;1 cup chopped onion&lt;/div&gt;&lt;div&gt;1 1/2 cup chopped apple&lt;/div&gt;&lt;div&gt;1 16 oz. can diced tomatoes, with liquid&lt;/div&gt;&lt;div&gt;1 cup uncooked white rice&lt;/div&gt;&lt;div&gt;1 1/2 Tbsp curry powder&lt;/div&gt;&lt;div&gt;1 1/2 tsp salt&lt;/div&gt;&lt;div&gt;2 tsp beef bouillon&lt;/div&gt;&lt;div&gt;2 Tbsp chopped peanuts (optional)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;/div&gt;&lt;div&gt;Heat dutch oven (or pot) on high.&lt;/div&gt;&lt;div&gt;Add beef &amp;amp; onion &amp;amp; stir until meat is browned.&lt;/div&gt;&lt;div&gt;Drain excess fat.&lt;/div&gt;&lt;div&gt;Add all ingredients except peanuts &amp;amp; heat to boiling, then reduce to simmering.&lt;/div&gt;&lt;div&gt;Simmer for 45 minutes or until rice is cooked through.&lt;/div&gt;&lt;div&gt;Serve &amp;amp; sprinkle peanuts in top, if desired. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;My modifications: I used ground deer since we have an abundance of it, &amp;amp; it was really good. I never add onion so I substituted onion powder, &amp;amp; nixed the peanuts. I also bought fire-roasted tomatoes because I like the added flavor. Spread that on top of rolled out crescent and then roll out and place 2nd of crescent rolls on top of the filling. Melt 1 stick of butter and pour over top crescent. Sprinkle cinnamon and sugar to taste on top of the whole dessert. Cook for 30-40 minutes. I prefer mine with a slightly crunchier top. It also preserves better this way. I also received a grill pan for Christmas so I can grill inside (the hubs does the outside grilling) so here is a recipe for indoor or outdoor grilling.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;London Broil&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;I bought 2 pounds of London Broil (which is usually top round roast, or flank steak, but was labeled London Broil at my market), about 1 1/2 inches thick. I marinated the meat in extra-virgin olive oil, balsamic vinegar, roasted minced garlic, &amp;amp; rosemary for about 8 hours (you can do it up to 24 hrs). Using my grill pan, I warmed it up to medium heat, &amp;amp; grilled it for about 8 minutes on each side (but it depends on your grill - check between 5-10 minutes per side to see how it's coming along). Let it sit for 10 minutes before slicing. Slice it thinly against the grain. The marinade makes the meat taste great!&lt;br /&gt;&lt;br /&gt;I also grilled some corn, zucchini &amp;amp; squash. Leave the corn in the husk to grill it. I seasoned the zucchini &amp;amp; squash with seasoning salt. Remove short ribs from the pan and strain the broth into a large saucepan or Dutch oven. Skim off excess fat; bring to a boil, uncovered, then reduce heat to medium and simmer for 5 minutes, uncovered. Add the remaining onion, celery, and carrots to the broth. Cover and cook over medium heat until vegetables are tender. Return the short ribs to the broth and heat through. Garnish with parsley to serve.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;My modifications&lt;/strong&gt;: I nixed the onion &amp;amp; vegetables &amp;amp; instead made brown rice &amp;amp; vegetables as sides, so I just left the ribs in the pot when I took it out of the oven. Its kinda similar to tortilla soup but with a Santa Fe type twist...&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;1 12 oz. jar of salsa verde&lt;br /&gt;3 cups shredded cooked chicken&lt;br /&gt;1 can white kidney beans, drained&lt;br /&gt;1 can corn, undrained&lt;br /&gt;3 cups chicken broth&lt;br /&gt;1 tsp. chopped rosemary (optional)&lt;br /&gt;sour cream&lt;br /&gt;tortilla chips&lt;br /&gt;&lt;br /&gt;Hint for cooking the chicken beforehand: Buy uncooked chicken tenders and cover with water in a pot. Add the rosemary in with the chicken and cook on low for 1 hour, for chicken to absorb rosemary. Creates a great flavor that blends well with the salsa verde :) Drain and shred.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;br /&gt;Pour salsa in a large pot and cook on medium-high for 2 min. Make sure you flatten the dough enough so they don't expand &amp;amp; lose their shape. Mine were not all that good looking (but still tasted good!).&lt;br /&gt;&lt;br /&gt;Gingerbread Men (Betty Crocker recipe)&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients &lt;/strong&gt;&lt;br /&gt;1 1/2 cups granulated sugar&lt;br /&gt;1 cup butter or margarine, softened&lt;br /&gt;3 tablespoons molasses&lt;br /&gt;1 egg&lt;br /&gt;2 tablespoons water or milk&lt;br /&gt;3 1/4 cups all-purpose flour&lt;br /&gt;2 teaspoons baking soda&lt;br /&gt;2 teaspoons ground cinnamon&lt;br /&gt;1 1/2 teaspoons ground ginger&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/2 teaspoon ground cardamom&lt;br /&gt;1/2 teaspoon ground cloves&lt;br /&gt;Currants or Assorted candies, if desired&lt;br /&gt;Colored sugar or Additional sugar, if desired&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;br /&gt;-Beat granulated sugar, butter and molasses in large bowl with electric mixer on medium speed, or mix with spoon, until well mixed. Beat in egg and water until blended. Stir in flour, baking soda, cinnamon, ginger, salt, cardamom and cloves. Cover and refrigerate about 1 hour or until firm.&lt;br /&gt;-Heat oven to 350°F. But I'm afraid this is one recipe I make anyways because it is THAT good (in my opinion anyways!).&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;1 lb chicken breast, cut into strips&lt;br /&gt;1 can whole cranberry sauce&lt;br /&gt;2/3 c chili sauce&lt;br /&gt;2 T cider vinegar&lt;br /&gt;2 T brown sugar&lt;br /&gt;1 pkg dry onion soup mix&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;br /&gt;Mix everything &amp;amp; put it on the chicken in the slow cooker. The chicken is baked rather than fried which makes it healthier ;) So yummy!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;1 tbsp chili-garlic sauce (I use Frontera Classic Mexican Cooking Sauce w/ red pepper and roasted garlic from HEB)&lt;br /&gt;3 tbsp pineapple juice&lt;br /&gt;4 boneless, skinless chicken breasts&lt;br /&gt;3/4 c. bread crumbs (I used Panko)&lt;br /&gt;kosher salt&lt;br /&gt;3 tbsp canola oil&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;br /&gt;Heat oven to 450 degrees F. In a large bowl, combine the chili-garlic sauce and pineapple juice. Add the chicken and toss to coat. In a seperate bowl or shallow dish, combine the bread crumbs, 1/2 tsp salt, and the oil. Working with one peice at a time, coat the chicken with the bread crumb mixture and tranfer to a baking sheet. Repeat with the remaining chicken. Add broth, tomatoes with juice, and drained green chile's. Cover &amp;amp; bring to a boil over high heat. Meanwhile rinse chicken &amp;amp; cut into 1/2 inch pieces.
